Summer Salad

Ingredients:

Chicken marinade

- 6-8 chicken thighs

- 1/2 cup balsamic vinegar

- 1/4 cup rice vinegar

- 3 cloves garlic

- 1 Tbsp grated ginger (or 2 tsp ground ginger)

- 2 Tbsp honey

- 2 Tbsp olive oil

Salad Ingredients

- 4 cups Arugula

- 3 figs, sliced (or any summer fruit)

- 4oz Goat cheese

- 1/3 cup Pistachios

- Bread or 1 cup grains

Directions:

  1. Marinade chicken thighs for 30min or overnight. Bake at 375 for 40 minutes.

  2. While your chicken bakes, toss arugula, fig, goat cheese, and pistachios.

  3. Add chopped chicken on top. Drizzle with additional balsamic vinegar and olive oil.

  4. Either add bread to the side (I used focaccia) or turn it into a grain bowl by tossing in quinoa or farro. Whatever you do, don’t forget to add the protein and carbs! Without it this salad would be really sad!
