Steak Kabobs

Ingredients:

 -       1-2 pounds sirloin steak, cut into 1 inch cubes

-       ¼ cup plus 1 Tbsp canola oil

-       1 Tbsp lemon juice

-       1 Tbsp steak seasoning of your choice

-       2 cloves minced garlic  

-       1 tsp crushed red chili pepper

-       1 tsp ground cumin

-       2 medium zucchini, cut into ½ inch slices

-       1 medium red bell pepper, cut into 1 inch pieces

-       ½ pineapple cut into 1 inch chunks (or canned and drained pineapple chunks)

-       Metal or wooden grill skewers

-       Cooked rice

 Directions:

1.     In a large bowl or plastic bag combine ¼ cup canola oil, lemon juice, steak seasoning, and 1 clove garlic. Add steak cubes and mix to combine. Let marinade in refrigerator for at least 30 minutes or overnight.

2.     In a separate bowl toss cut vegetables and pineapple with 1 Tbsp canola oil, red chili pepper, ground cumin, and other clove of minced garlic.

3.     If using wooden skewers, soak in water for at least 10 minutes (this helps to prevent them from burning while on the grill). Alternately thread beef and vegetables/pineapple onto skewers. Discard remaining marinade.

4.     Grill kabobs, covered, over medium heat until beef reaches desired doneness, approximately 10-12 minutes, turning occasionally.

5.     If you do not have a grill, these can also be cooked in the oven on a sheet pan under broil for approximately 5 minutes on each side or until beef reaches desired doneness.

6.     Makes 4 servings. Serve with rice.

*Feel free to modify to meet flavor preferences. Alternate vegetables might include yellow squash, onion, mushrooms, cherry tomatoes, or asparagus. Try with shrimp or chicken with various marinade combinations. Ask your dietitian for alternative marinade suggestions!
